Healthy White Bean Dip Recipe

Looking for a white bean hummus recipe after watching Dr. Oz?  Check out this healthy, vegan version (served at our table during the Forks Over Knives screening) that can be both gluten- and soy-free.  This recipe is a great way to use up leftovers in the fridge, but you can also double the recipe and prepare fresh caramelized onions and roasted garlic just for this dip. Healthy White Bean Dip

Ingredients
2.0 cups organic white kidney beans, drained and rinsed if canned
0.5 cup caramelized red onion, coarsely chopped
4 cloves roasted garlic
0.5 cup organic raw tomatoes, coarsely chopped (or buy cherry tomatoes)
0.25 cup NOW Foods brand nutritional yeast flakes
1 TBS NOW Foods brand extra-virgin olive oil
2 tsp smoked paprika
1 tsp roasted cumin powder (or toast and grind your own cumin seeds)
0.5 tsp salt or liquid aminos (use salt for SF/GF)
1 tsp preserved lemon (can substitute lemon juice)
.5 cup NOW Foods Brand salted pistachios, shelled and roughly chopped

Directions
Combine all ingredients except for the pistachios in a large food processor or high-speed blender until a smooth puree is formed. Add extra tomatoes, olive oil, or purified water to facilitate blending, if needed. Check for seasonings, adding more salt, preserved lemon, or smoked paprika to taste. Spread into serving dish and garnish with NOW Foods brand pistachios. Cover with plastic wrap and refrigerate for 1-2 hours, allowing flavors to meld.
